Mashed Potatoes

Mashed Potatoes
Mashed potatoes, we all remember it from our childhood, it is one of those fun-foods and it is even easy to make!

Ingredients for 3-4 portions

1 kg creamer potatoes (mealy, floury, washed, peeled and cut into quarters)

1.5 dl milk

1 dl cream (or 4 Tbs butter)

nutmeg, salt and pepper

Preparation Time

Ca. 35 min, 15 min preparation, 20 min cooking

Bring salted water to a boil and cook the potatoes until tender, about 20 minutes. Drain them well and and put the pan back on the warm stove to let any left over water evaporate while lightly shaking the pan – potatoes will look whitish and dry. Meanwhile, heat the cream and milk in a small saucepan. Put the potatoes through a ricer or food mill into a bowl and while stirring slowly add the hot milk and cream (or butter), seasoned with nutmeg, salt and pepper, till the consistency is as desired, fluffy and light.

Important Tip:
If you don't have a food mill in your kitchen use a folk or something similar :) But do not use a blender, I did this ones and the starch of the potatoes turned it into a glue-like, sticky mush.

In the late 1970s when the government mandated we get the fat out of our food, the food industry responded by pouring more sugar in. The result has been a perfect storm, disastrously altering our biochemistry and driving our eating habits out of our control.
