Food cooked according to Ayurvedic principles has all the six tastes: sweet, sour, salty, pungent, astringent and bitter. It is lightly spiced, using very little oil.
Learn the basic technique of Indian cooking and how to use spices for flavor and for enhancing the digestive and nutritional quality of the food. You will learn to make the healthy one dish meal called khichdi (made with rice and lentils), dal (lentils), rice, two kinds of vegetable dishes and a sweet chutney.
Darshana is a passionate and fantastic chef. She cooks with such ease and playfulness, it is a pleasure to be around her. And, she did the catering for our wedding party, it was a big success, the whole family loved the food even though they are used to eating traditional American food – I think because this food tastes so hearty with all the Indian spices.
